Brilliant ruby red with garnet reflections. Fine and elegant, with typical scents of violets, small red fruits and light spicy notes. Full, with good structure and persistence, with a personality that fully expresses the character of Sangiovese.
It should be served around 16° - 18° C.
Sant'Ilario enhances pasta dishes with meat sauces, roasts, braised meats and grilled meats such as the typical Florentine steak, as well as well-aged cheeses.
The grapes are vinified according to the traditional method of fermentation in the presence of the skins which lasts for about 10 days at a temperature of 28° C. Once the malolactic fermentation is complete, the wine ages for 6 months in Slavonian oak barrels and another 4 months in the bottle.
