Crafted exclusively from the Pinot Noir grape, the colour of a rosé sparkling wine poses a
great challenge for winemakers. While some producers find comfort and consistency in
using Pinot Noir reserve wine to achieve a rosé colour, our winemaker is adamant in relying
solely on the Pinot Noir skins to achieve Rosalie’s light, pastel coral colour.
On the nose, ripe raspberry is complimented by a touch of rhubarb and zesty orange peel.
On lees for two and a half years, there is a vibrant acidity on the palate helps express beautiful tart strawberry and white cherry notes. This finish remains crisp and dry with a hint of grapefruit and peach.
