Domaine Lafond Roc Épine
Jean-Pierre Lafond created the current cellar in 1970. Passionate about horses, he took the name of a famous trotter 'Roquepine' and transforms the spelling to give it a Provencal touch. Thus was born the Domaine Lafond Roc-Epine.
The TAVEL "DOMAINE LAFOND" is characterized by a color of a very pure pink tender. The dominant aromas are complex, red and white fruits combine with floral notes. In the course of time, these fruity aromas evolve towards more mellow notes, with touches of spices and stone fruits, while the color becomes amber with reflections. It has, from the first year, all its aromas but has an exceptional potentiality to aging. To be consumed with: Entrées, Mediterranean raised dishes, grilled meats, fried fish, but also with white meats and poultry. It is also the wine of brandade, bourride and bouillabaisse. In addition, the TAVEL is particularly recommended with Asian cuisine; In fact, it harmonizes perfectly with the flavors of the Far East. However, it can accompany a whole meal, from the aperitif to the cheese, thus avoiding certain mixtures.
Destemmed 100%, then macerated 48 hours between the temperatures of 8°-10°C in order to obtain a rich intense colour, maximum aromas and maximum concentration. The following two steps are pressing and fermentation regulated at low temperatures (16°-20°C) during 8 to 10 days.
